- I apologize to everyone that helped me with the Project, this final entry is long overdue and it is a little discourteous of me that it has taken this long to write my final chapter. So please forgive me, this project has meant a lot to me and ended up taking on a life of its own, I think I was avoiding closure. There were ultimately two goals: to finish an Ironman and open a restaurant; both of which were accomplished to varying degrees of success. What goes without saying, is the real benefit of the project ultimately was all of the unforeseen people, places and things that presented themselves and were documented along the way. The two Ironmans have been blogged and are old news, so I leave you with the project's swan song. Here is the story of how opening day unfolded... Let me start off by saying my mentor in the food game, Pat Fellows, is a superstar. He flew in the night before we were to open and I basically had no idea how we were going to pull this off. I had the restaurant stocked with paper goods and dry items but didn't have any perishables for obvious reasons. Pat made a quick inventory and we hit the ground running the morning of opening day. Without a way to cook inside the restaurant Pat went to work inside my tiny apartment preparing the order of the day.
