- After the birth of my daughter Danielle, I thoroughly enjoyed my full year of maternity leave. She was a great baby (most of the time) and that allowed me to explore one of my passions – cooking. It was such a treat to have a daily home cooked dinner and my husband Dave and I became used to this healthy lifestyle very quickly. When it was time to return to my full time job, one of our biggest challenges was…what will we have for dinner? I would get home from the office and my one year old was not very open to “mommy can’t play with you now because she has to cook dinner”. Since our time together in the evening was very limited, I didn’t want to spend it grocery shopping, prepping, cooking, and cleaning. We found ourselves ordering in and eating out more than ever which became a concern.
