Wine appreciation is a skill that comes through experience and study. Libraries and bookstores have an abundance of material describing the human mechanics involved in seeing, tasting and smelling. This is intellectually stimulating, but it is no substitute for tasting the real thing.
Begin personal training by making notes about the wines you taste. Apply the vocabulary that comes from the books. It is easier to discriminate taste sensations when you have two or more glasses for comparison. Tasting clubs offer an opportunity to sit down with 6-8 samples of similar wines - a great way to educate your palate. Extension courses offer an opportunity to learn the technology as well as give the palate some exercise. The University of Guelph offers one of the most extensive study programs in Ontario for wine appreciation and wine making.
The more you learn about wines, the more you will be able to enjoy the many subtle characteristics. Remember that wine is a good and living food. However, too much of a good thing, is not a good thing.
