The gluten free chef

Have you been told by your doctor that you, or a close family member, needs to follow a gluten free diet?

There are a number of conditions that can benefit from a gluten free diet, such as ADHD, autism, fibromyalgia, and of course coeliac/celiac disease. In fact for the latter, a gluten free diet is the only treatment!

When you are first diagnosed with coeliac disease it can be very confusing knowing what is safe to eat and what will cause harm. Having lived my life following the gluten free diet, I decided it was time to share my experiences and hopefully help others cope.

The symptoms of celiac are so diverse that it can be difficult to get a diagnosis. They include failure to thrive in infants, diarrhea or constipation, brain "fog", fatigue and sleepiness, an itchy rash, abdominal pains, mouth ulcers, wind and flatulence.

Wheat is a staple food for many people in the western world, but to those of us with Coeliac (celiac in the USA) it is a form of poison. Even if it doesn't produce symptoms of ill health it still causes damage to our intestines and, left untreated, can lead to nasty cancers and other problems.

Happily there are alternative grains that can be ground into flours and used for baking and thickening foods and sauces.

These alternative grains include rice, soy, amaranth, teff, millet, quinoa, tapioca, corn and arrowroot. In fact many of them are more nutritious than wheat; teff and quinoa in particular.
